Hot Thai Bird’s Eye chilli seeds are a must-have for anyone who loves bold, intense flavours. These Bird’s Eye chilli seeds grow into compact plants that produce clusters of slender, chillies, each about 7.5cm long, with a fiery red colour and taste that stand out as much in the garden as they do in the kitchen.

Known for its intense heat and bright flavour, Bird’s Eye is one of the spiciest chillies and a staple in Thai and Indian cuisine. Small yet mighty, they are perfect for spicing up authentic Asian soups, stir-fries, sauces, salads, and curries. Their bold colour makes them an eye-catching garnish, too. Plant them in a sunny spot with well-drained soil to enjoy a consistent supply of home-grown heat. The small size of the Bird’s Eye Chilli makes it an excellent choice for drying so you can enjoy a spicy kick even when the growing season is over. Simply hang chillies on twine in a dry location with good airflow and no direct sun to dry or use a dehydrator.

Spicy Soba Noodles with Chicken & Vegetables

Ingredients

  • 1/3 cup chicken stock
  • 1 tbsp oyster sauce
  • 1 tsp corn flour
  • 1/4 tsp sesame oil
  • 250g soba noodles
  • 1 tbsp vegetable oil
  • 250g chicken breasts, thinly sliced
  • 50g shiitake mushrooms, stemmed and quartered
  • 2cloves garlic, minced
  • 1 tsp minced fresh ginger
  • 2 baby pak choy, halved and sliced lengthwise
  • ½ red capsicum thinly sliced
  • ½ yellow capsicum, thinly sliced
  • 1 Thai chilli, thinly sliced
  • 100g green beans sliced
    • Instructions

      1. Combine stock, oyster sauce, cornstarch and sesame oil in a bowl and set aside.
      2. Cook soba noodles according to package directions. Drain and set aside.
      3. In large nonstick skillet or wok, heat 1 tsp of oil over medium-high heat. Cook chicken untill lightly golden, about 3 minutes. Transfer to plate.
      4. Add remaining oil, beans, mushrooms, garlic, chilli and ginger to pan; cook, stirring, until fragrant, about 1 minute. Add capsicum and bok choy. Cook until tender but crisp, about 4 minutes.
      5. Add sauce mix , noodles and chicken to pan; cook, stirring to coat with sauce, for 1 minute.
